Beer Batter Fish
Fish fillets (enough for a meal)
Salt
Pepper
Pancake Mix – Hungry Jack, extra light
1 12 oz. can beer
Use enough pancake mix with the can of beer to make a batter that doesn’t coat the fish too heavy but still does not run off the fish when dipped into it. Salt and pepper each fish to taste. Dip into batter and then into hot oil that has reached a temperature of 375. Fry until brown on one side then turn over and broth the other side. Remove to platter.
